兩年前來廣州四季酒店 Four Seasons Hotel Guangzhou,最喜歡是到中餐廳愉粵軒用餐,今年餐廳剛獲得2018首版米其林指南一星榮譽,這次來到又再來午餐,品嚐一星菜式。這天菜單由大廚安排,先有XO醬三層肉拼海蜇花,Barbecued Pork Belly with XO Chilli Sauce,Jellyfish with Roasted Sesame & Caviar,皮脆的燒腩肉加上大廚自家製的XO醬,吃去來更加惹味。海蜇爽脆帶醋酸,令人開胃。



四季蝦餃拼漿爆流沙奶皇包,Steamed Shrimp Dumpling with Steamed Creamy Custard Bun,上次來愉粵軒主要是吃點心,招牌蝦餃飽滿鮮味,值得回味。還有流沙包同樣不能錯過,鹹蛋黃味道濃郁,也是受歡迎的點心之一。


接著是大廚用肉蟹拆肉做了兩道菜式,鮮蟹肉瑤柱玉米羹,Crab Meat Soup with Sweet Corn & Conpoy,及黑松露菌白雪蒸鮮蟹肉,Steamed Fresh Crab Meat with Black Truffle,玉米羹加入新鮮蟹肉,十分鮮甜,而蟹肉蒸蛋白不只鮮味,蛋白滑溜,加上黑松露香氣相當吸引,十分喜愛這道菜式。


XO醬牛崧炒飯,Fried Rice with Minced Beef & XO Sauce,炒飯香口而不油膩,上湯蘆筍竹笙卷,Poached Bamboo Pith with Asparagus,再來一客蔬菜,以竹笙包著爽脆的蘆筍。最後以時令果盤拼楊枝甘露,Chilled Mango with Sago Cream & Pomelo,Seasonal Fruit,為午餐作結。
